It is appreciated not only because it avoided the attention of civilization and the "improvements" of botanists and agronomists. It is the composition that makes this cereal special and unique. So, 100 grams of groats, not subjected to heat treatment, contains:

Carbohydrates in dinkel are slow. In the body they are decomposed and absorbed gradually, without causing a sharp jump in blood sugar. Porridge and other dishes from dinkel are not only satisfying and nutritious, but also gentle for the figure.

The crop contains protein in a larger volume than in other ones and consists of fourteen essential amino acids. Among them there is tryptophan: an essential element for a good mood and strong nervous system. It is tryptophan that "converts" serotonin into the happiness hormone.
